Recipe: Stuffed Noodle

This is the altered recipe I use. I never find the jumbo noodle recipes as flavorful as I liked, so I experimented a bit.

Ingredients

1 Jar Spaghetti sauce or at least 20 ounces of tomato based sauce (I like the Roasted Garlic Parmesan by Prego)
1 box of jumbo shells
1 pound Ground Beef
1/2 cup chopped cilantro
1/2 cup chopped white onion
1 tablespoon black ground pepper
1 large can of mushrooms (stems and pieces)
1 cup cheddar cheese
3 packages cream cheese
1 cup mozzarella cheese
1 cup grated parmesan

Mixing Instructions

1. Brown beef with chopped onion, pepper, and mushrooms. Add cilantro towards the end of the browning. Set aside when done.
2. Remove cream cheese from packages and soften for at least 2 minutes on medium in the microwave.
3. In a large bowl combine cheddar cheese, mozzarella cheese, parmesan, and cream cheese. Mix well.
4. Combine browned meat and cheese filling in the large bowl
5. Put shells in a large container and boil until firm. Drain and rinse in cool water.
6. When shells are done, take a small spoon and fill with your meat and cheese filling. Place in a large
baking pan with filling side facing upwards. Two baking pans may be needed.
7. Preheat oven to 325 degrees Fahrenheit.
8. Once shells are placed in pans, pour layer of spaghetti/ tomato based sauce
9. Bake for 25 minutes and serve. Makes about 6-8 servings.

Recipe: Granola Grape Salad

This is an altered reciped I use. No one seems to make it like I do, so I am sharing it.

Updated – December 9, 2008 (I will post a picture next time I get to make it)

Ingredients
1 pound Large grapes (regular or red – seedless)
2 packages cream cheese
1/2 cup brown sugar
3 cups granola
1 cup celery
1 cup chopped walnuts
2 – 12 ounce whipped topping

Mixing Instructions
1. Put grapes, celery, chopped walnuts, half of the brown sugar, 2 cups of granola, and cool whip in large bowl
2. Take cream cheese from wrapper and soften for 1 and a half to two minutes in microwave.
3. Add cream cheese to bowl and stir
4. Sprinkle last cup of granola and brown sugar on top of contents
5. Put in fridge to chill for 30 minutes
6. Take out and serve. Makes 6 to 8 servings
